The other two areas that will typically need finishing in a new construction setting are: inside corners and outside corners.  Inside corners require taping and mudding, while outside corners get metal "corner bead".

Outside corners
If you are not responsible for the hanging of the drywall, the outside corners should already have metal corner bead installed on them by the carpenters. 

To finish outside corners you simple apply joint compound from the outside edge of the bead (using it as kind of a guide) over the rest of the corner bead and onto the drywall.  You do not need to tape over the corner bead - where metal meets drywall.  Apply three coats of drywall compound - each a little wider than the previous coat.
Inside corners
Inside corners require the finisher to tape and finish them.  The tape is measured to size ( ex. 8' ), and folded, then pressed into the corner, and then finally pushed onto the mud to embed the tape.  I use a special corner knife for this process, but you certainly can use a 6" flat knife and run it first down one side and then the other side.  Again you will need to apply three coats of compound each a bit wider than the last.  I will usually apply the first coat of mud (after embedding) with a corner knife also.  The final coat I apply with a 6" knife to one side (allowing that side to dry) and then the other side (the next day after the first side has dried).  If I need to speed up the job and can't wait for overnight drying,  I will use the inside corner knife for the last coat also.

Once the final coat of drywall compound is dry ( usually 24 - 48 hours depending on drying conditions ), you may sand the drywall smooth and prime with a PVA primer made for new construction drywall.
